cover feature,
“Persistence

Salmonella

E. Coli
on
the Surface
of Restaurant
Menus,” note
that the cleanli-
ness of items
such as cutting boards, faucet handles, and
refrigerator door handles in restaurants
has previously been investigated. The
cleanliness of menus, however, has not
been examined, so the authors set out to
discover whether menus could harbor any
pathogens. They determined the ability of
bacteria to transfer from menus to finger-
tips and from fingertips to clean menus
and showed that bacteria can be transferred
for up to 24 hours; thus, restaurant menus
may serve as vehicles for pathogens.
